It feels amazing knowing I’ve made it to three years at Grind. I’ve always worked in hospitality; restaurants, hotels, but it wasn't until five years ago that I was offered a restaurant manager job.

So Costa, how long have you been working for Grind?
Just over 3 years, feels amazing I’ve made it. I’ve always worked in hospitality; restaurants, hotels, but it wasn't until five years ago that I was offered a restaurant manager job.

Tell us about your journey with Grind so far?
I started as a senior waiter, 3 weeks later i was offered AGM at London Grind. Shortly after i was acting GM. Then finally moved into permanent GM position shortly after. iT WAS challenging managing LDN grind. I felt that i needed a new challenge and knew that Clerkenwell was underperforming, so I wanted to work my magic and turn it around. A few months on, I'm here in Shoreditch Grind.

What do you enjoy the most about working for Grind?
The people, definitely the people. 

What are the biggest challenges you and your team faced?
When we started opening new venues, we didn't really have the staff power. So it was hard work, but worth it.  Events at christmas are crazy, but the team get such a buzz out of it.

When you’re not at work, what do you do in your spare time?
Love to spend time with my family that is over here, I adore the cinema.

What’s your favourite film?
American History X, I love thrillers and horrors, always get the blood going! (Rocky)

How do you get such good and consistent reviews from customers on TripAdvisor? 
Give your best to every customer, no matter what they want, if they're ordering one pound or five hundred pound.

You must get a wide variety of people coming in, you’ve got people coming in for brunch, business people coming in for coffee and then party animals in the evening. What aspect of service do you enjoy the most?
I enjoy the table service. I’ve worked in nightclubs for years, I much prefer the banter you get when you're serving people at tables. 
Biggest table 88 people, my assistant was sick that day so that sticks in my mind

What's the best thing on the grind menu?
The burger with a fried egg and chicken salad. I don’t actually like avocado, but don’t tell anyone!
